Stuffed Chicken Breast With Mushroom And Red Wine Sauce

Recipe 

Servings: 4 (1 stuffed chicken breast per person)

Portion Size: 1 stuffed chicken breast per serving

Preparation Time: 15-20 minutes (prepping and stuffing the chicken)

Cooking Time: 25-30 minutes (baking or pan-searing, until internal temp reaches 165°F or 75°C)


Ingredients 

For the Stuffed Chicken Breast 

  •  4 boneless, skinless chicken breasts 

  • 1 cup chicken mince 

  • 1/4 cup sun-dried tomatoes, chopped 

  • 1 tbsp fresh herb of your choice, finely chopped 

  • Salt and pepper, to taste 

  • 1 tablespoon olive oil 

Equipment Needed 

  • Knife 

  • Meat tenderizer hammer (optional) 

  • Mixing bowl 

  • Oven-safe skillet 

  • Toothpicks (optional)

Instructions 

Prepare the Chicken 

  • Slice a pocket into the side of each chicken breast, being careful not to cut all the way through. 

  • Use a meat tenderizer hammer or back side of the knife to flatten it a bit. Flatten the sides a little thin so they can close and seal the filling nicely. 

  •  Season both sides of the chicken breasts with salt and pepper and keep aside. 

Make the Filling 

  • In a bowl, combine the chicken mince, chopped sun-dried tomatoes, and finely chopped herbs. Mix well until fully combined. 

  • Spoon the filling into each chicken breast, pressing gently to ensure it stays in place. You can use back of the knife to tap it to make sure both sides are sealed nicely. Secure with toothpicks if needed. 

Cook the Chicken 

Oven cooking 

  • Preheat the oven to 375°F (190°C). 

  • In a large oven-safe skillet, heat olive oil over medium-high heat. Add the stuffed chicken breasts and sear on both sides for about 3-4 minutes until golden brown. 

  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked and juices run clear. 

Pan/Skillet cooking 

  • In a large skillet, heat olive oil over medium-high heat. Add the stuffed chicken breasts and sear on both sides. Once sealed, reduce the heat to medium and cover with a lid or foil. Cook for 12-15 min. Check for clear juices by inserting a toothpick. 

Serve 

  • Remove toothpicks and serve hot. If you decide to slice it, then let it rest for 4-5 min so juices doesn’t run out . 

  • Serve with our favorite sauce accompanied by some sides. 

  • Garnish with fresh herbs, if desired. 

Tips 

  • For added flavor, try mixing in fresh herbs like thyme, basil or parsley into the filling. 

  • Make sure the skillet is oven-safe if you're transferring it directly to the oven, or you can use a baking dish after searing. 

  • You can change the filling to include other cheeses like feta or even add sliced mushrooms for more texture. 

  • You can add some sauce after searing and let the chicken simmer in it to cook. It adds flavors to the chicken.
