Hasselback potatoes originated in Sweden in the 1950s and were first served at the Hasselbacken Restaurant in Stockholm. These elegant, accordion-style potatoes are loved for their crispy edges and creamy interiors, making them a favorite side dish worldwide. 

Hasselback Potatoes

Recipe 

Servings: 4-6 (1 potato per person)

Portion Size: 1 medium-sized Hasselback potato per serving

Preparation Time: 10-15 minutes (slicing and seasoning potatoes)

Cooking Time: 40-45 minutes (roasting at 400°F/200°C, until crispy and tender)


Ingredients 

  • 6 medium-sized potatoes (Russet or Yukon Gold work best)   

  • 3 tbsp unsalted butter, melted   

  •  3 tbsp olive oil   

  • 4 garlic cloves, minced   

  • 2 tbsp fresh parsley or thyme, finely chopped   

  • Salt and pepper to taste   

  • ½ cup grated Parmesan cheese (optional)   

Equipment Needed 

  • Sharp knife   

  • Two wooden spoons or chopsticks (to guide cuts)   

  • Baking sheet or oven-safe dish   

  • Brush for butter/oil application 

Instructions 

Preheat Oven 

  • Preheat your oven to 425°F (220°C). 

Prepare Potatoes 

  • Wash and dry the potatoes thoroughly.  

  • Place each potato between two wooden spoons or chopsticks to prevent slicing all the way through. Using a sharp knife, make thin, even slices about â…› inch apart, stopping just before cutting through the base.   

Prepare Potatoes  

  • Combine melted butter, olive oil, minced garlic, and a pinch of salt and pepper in a small bowl. 

  • Place the sliced potatoes on a baking sheet.  

  • Using a brush, generously coat the potatoes with the butter mixture, making sure to get into the cuts for maximum flavor. Reserve some of the mixture for later.   

Bake    

  • Bake the potatoes in the preheated oven for 30 minutes.   

  • Remove the potatoes from the oven and brush them again with the remaining butter mixture. 

  • Sprinkle grated Parmesan cheese on top if using.   

  • Return the potatoes to the oven and bake for an additional 20–30 minutes, or until the edges are crispy and golden, and the centers are tender.   

Garnish and Serve   

  • Sprinkle fresh parsley or thyme over the top before serving. Enjoy them warm!   

Tips  

  • Use evenly sized potatoes for uniform cooking.   

  • To make slicing easier, chill the potatoes in the fridge before cutting.   

  • Use the chopsticks holding trick for even cutting 

  • For extra crispiness, turn on the broiler for the last 2–3 minutes of baking.
