Grilled Veg And Cheese(Paneer) Sandwich- Indian Style

Servings -  4 people

Portion size- 2 sandwich halves per person

Preparation time - 15 minutes

Cooking time - 10 minutes

Ingredients

  • Bread slices – 8 (whole wheat or multigrain preferred)
  • Onion – 1 medium, finely chopped
  • Capsicum (green bell pepper) – 1 small, finely chopped
  • Carrot – 1 medium, grated
  • French beans – 10–12, finely chopped
  • Paneer (Indian cottage cheese) – 1 cup, crumbled
  • Green chili – 1, finely chopped (optional)
  • Cumin seeds – ½ tsp
  • Turmeric powder – ¼ tsp
  • Red chili powder – ½ tsp (adjust to taste)
  • Chaat masala – 1 tsp
  • Salt – to taste
  • Siriracha- optional
  • Lemon- as per taste
  • Oil or butter – 2 tsp + for toasting
  • Fresh coriander leaves (optional) – a small handful, finely chopped

Equipment Needed

  • Chopping board & knife
  • Non-stick pan or tawa
  • Spatula
  • Grater
  • Sandwich toaster/grill (optional)

 

Instructions

  1. Prep the Veggies: Chop all vegetables finely. Grate the carrot and crumble the paneer.
  2. Sauté the Mix:
    • Heat 2 tsp oil in a pan. Add cumin seeds and let them crackle.
    • Add turmeric powder, and red chili powder
    • Add onions,  beans, carrot, and capsicum, and green chilies.
    • Cook on medium heat for 3–4 minutes until slightly tender but still vibrant.
    • Add salt. Mix well. Cook until veg becomes a bit dry. Add rest of the spices and mix.
    • Stir in crumbled paneer. Cook for another 2 minutes until flavors blend. Add lemon juice.
    • Turn off the heat. Mix in coriander and leave aside to cool.
  3. Assemble the Sandwich:
    • Spread the prepared mixture evenly over a bread slice.  Add a slice of cheese, and sriracha to make it spicy.
    • Cover with another slice.
    • Toast on a greased pan/tawa with butter or grill in a sandwich toaster until golden and crisp on both sides.
  4. Serve:
    • Cut diagonally and serve hot with ketchup, green chutney, or yogurt dip.

Tips

  • You can add grated cheese for extra richness before grilling.
  • Add boiled corn or cooked mashed potatoes to make it more filling.
  • Use leftover dry sabzi as a filling variation!
  • For a healthier version, toast on a tawa without butter or use an air fryer.
